Reubens (4 servings)

8 slices rye bread
1 lb. corned beef
1/2 lb. Swiss cheese
2 cups sauerkraut
1/2 cup Thousand Island salad dressing
butter

Spread 1 tablespoon of Thousand Island salad dressing on each of
four slices rye bread. Layer 1/8 lb. Swiss cheese, 1/4 lb. corned
beef, and 1/2 cup sauerkraut on each. Spread remaining slices of
bread with 1 tablespoon salad dressing and use to top prepared
sandwiches. Spread a thin layer of butter or brush melted butter
on bread of each sandwich, like you would grilled cheese. Toast in
a skillet until golden brown, flip and brown other side.
