Sloppy Joes
Yield: 8 or more servings

1 large onion
1 large green bell pepper
2 large stalks celery
few cloves garlic (optional)
4 pounds lean ground beef
1 cup tomato catsup
1 small can of tomato paste
4 Tbsp white vinegar
4 Tbsp brown or white sugar
1 Tbsp Worcestershire sauce
2.tsp soy sauce
salt and fresh black grated pepper to taste
Fresh soft sandwich rolls or buns.

Chop vegetables medium fine. Saute till softened in a small amount
of olive oil. In separate pan, saute meat and drain off any excess
fat. Combine meat into vegetables. Add remaining ingredients.

Bring to boil, simmer and cook and stir about 20 to 30 minutes to
blend flavors. Adjust seasoning to taste. Serve over rolls. Portions
may be frozen.

Notes: things such as dry onion soup mix, chili powder, kernel
corn, chopped drained tomatoes may be added to the above basic
recipe in desired amounts to achieve desired flavored and texture.

Can be served over pasta, rice, pizza or made into a pot pie instead
of served over traditional bread or rolls.
