2 cups of chopped cooked turkey, white and or dark meat. 1 to 2 large onions chopped. (2 cups) 1 cup ketchup 1 tbsp. Brown sugar. 1 tsp yellow mustard 1/2 tsp Worcestershire sauce (Lea and Perrin) 1/2 tsp chili powder. You should begin with as much raw onion as you have turkey (by volume). Measurements need not be exact. Fry onion in a small amount of oil until very brown. This is the secret to good barbeque. Cook the onions well to develop the nice brown color and the bring out the sweet taste. Add turkey and shred the turkey as it heats up. Add enough ketchup to turn the mixture pink. You need not add the full amount. Add all remaining ingredients and allow to cook for 30 minutes on low heat. You may need to add a small amount of water to make a bit of sauce. The longer this mixture cooks the better. It freezes well also. It's usually better the second day. Spoon onto hamburger buns and serve. It's similar to Sloppy Joes but has less fat since it's made with turkey instead of ground beef. You may also substitute, ground beef (browned and drained), roast pork, or even roast beef. Tom Picciani.
