Barbecue Sauce
Makes 4 1/2 Cups

3 medium onions, finely chopped
3 cloves of garlic, minced
3 tablespoons vegetable oil
3 cups ketchup
1/2 cup firmly packed light brown sugar
1/3 cup vinegar
3 Tablespoons Wrights hickory seasoning (optional)
2 Tablespoons Dijon mustard
1 teaspoon Tabasco hot sauce

In a large saucepan, over medium-high heat, cook onions and garlic
in oil until tender. Stir in ketchup, brown sugar, vinegar, hickory
seasoning, mustard and Tabasco. Heat to a boil; reduce heat.
Simmer 10 minutes. Use as a barbecue sauce on any meats. Can be
stored in refrigerator for up to 2 weeks in a covered container.
