Eastern North Carolina Sauce

1 C white vinegar
1 C cider vinegar
1 Tbs. brown sugar
1 Tbs. cayenne pepper
2 tsp crushed red pepper
1 Tbs tobasco
2 tsp Worcestershire sauce
1 tsp kosher salt
1 tsp coarse black pepper

Mix together.

Some people add water and simmer the sauce for a while. If you do
so without a good vent hood, your house will smell like vinegar
for a day or two.

There are plenty of variations, but in eastern NC, the natives
don't use tomatoes in BBQ sauce (like Western NC) or mustard (like
SC).
