Butterscotch sauce

125g butter
125g brown sugar
1 cup pure cream

Melt the butter and sugar in a small saucepan and bring to the boil
so that the sugar dissolves into the butter. Stir until the sugar
begins to bubble and caramelise. Add the cream and stir over a low
heat until smooth.
