Cheese Sauce

2 Tbsp. butter
2 Tbsp. flour
1/2 tsp. dry mustard
1 c. milk
1/3 c. sharp cheddar cheese, shredded
salt and white pepper to taste

Melt butter and blend in flour and dry mustard. Stir until flour
and mustard are dissolved. Continue stirring until thick and
bubbly. Gradually add milk and cook, stirring until thickened.
Stir in cheese; salt and pepper. Makes 1 cup.
