of my friend who grew up in North Little Rock, Arkansas. She doesn't believe this to be especially a "mountain folk" recipe, as had been suggested, but it is deceptively simple, and extremely good.
CHOCOLATE GRAVY
Combine in a heavy saucepan 2 Tbs cocoa (Hershey's appears to be the preferred brand), about 2 Tbs sugar, more or less, depending on how sweet you like it, and 1 Tbs flour. Mix thoroughly.
Into that mixture, add about 1 cup of milk, a little at a time, mixing until smooth. If it ends up being too thick, you can add more milk later to thin it.
Place the pan over medium heat and bring to a simmer, stirring frequently, till thickened. Check for desired thickness and sweetness, and adjust if necessary.
Remove from the heat, and stir in 1 tsp of vanilla extract.
Pour over buttered biscuits, and serve with cold milk. Makes about one cup, which is two servings or so.
Beyond the recipe, and the fact that my friend's grandmother had apparently been making this since around the 1930's, little seems to be known, but it's a good start, anyway.
Enjoy!
P. Troy

I thought it was my birthday, May 5, 2004 - 08:45 AM
Reviewer: Mandy C from Norman , OK
When I was a little girl I lived in a very small town. As well as the rest of my family. My grandma lived just a few blocks from my house next to her sister and her mother. Every year on my birthday she would call me and say sis, breakfast will be ready in 20 minutes you better get down here. I would hurry and get dressed because I knew what was going to be there waiting. Her home made biscuits and chocolate gravy, my favorite. Since those care free days I've grown up and had a family of my own and I've tried making it for my self with different recipes, but nothing came close. Thank you Mr. Troy your recipe made me feel like a 9 year old girl on her birthday.
