Creamy Cocktail Sauce
To make 2 cups
1.25 cups mayonnaise
1 Tbls horseradish
2 Tbls chili sauce
2 Tbls ketchup
1 Tbls red bell pepper, small dice
1 Tbls green bell pepper, small dice
1 Tbls shallots, minced
1 Tbls chives, diced
1 Tbls red wine vinegar
1 Tbls vegetable oil
2 tsp paprika
1 tsp cayenne pepper
2 tsp sugar
salt
ground white pepper
Combine all ingredients in a mixing bowl and blend well. Let the
sauce stand overnight, covered and refrigerated, to develop its
full flavor.
