Cranberry Relish

25 g butter
500 g onions; finely chopped
450 g fresh cranberries; rinsed
110 g soft brown sugar
60 ml orange juice
60 ml raspberry vinegar
125 g marmalade
1 tablespoon ground allspice

Melt the butter in a large saucepan and brown the onions. Lower
the heat and add the cranberries, sugar and liquids. Cover and
cook for 15 minutes.

Add the remaining ingredients. Heat until bubbling and cook
uncovered for 25-30 minutes so that the liquid has reduced. Stir
frequently so the mixture does not burn, leave to cool.

Spoon into airtight sterilised jars and keep refrigerated until
ready to serve. Keep refrigerated and consume within 3 weeks.
