Cranberry Relish 14

Cranberry Orange Relish 1 whole bag fresh cranberries 1 small juice orange 1 cup sugar (more or less to taste) 1/2 cup chopped walnuts Rinse the cranberries and put aside to dry. Wash and quarter orange. Put half of the cranberries and all orange quarters (skin, seeds and all) into the food processor and process until the orange peel is chopped to confetti size pieces. Put remainder of cranberries into processor and pulse until they are coarsely chopped. Transfer cranberry mixture from processor into large bowl, then add sugar and walnuts. Mix well. Add more or less sugar according to taste. Chill at least 2 hours.
You may freeze the cranberries prior to preparing this recipe, it appears easier to get a good coarse textured relish this way. Doubling the recipe works well.
