Turkey Gravy

Before you put your turkey in the roaster, chop 2 - 3 large onions,
2 carrots, 1 whole head of garlic peeled, 1 bay leaf, salt and
pepper to taste, 1 tsp sweet basil. Put all the veggies and herbs
in bottom of roaster pan and place turkey on top. Cover and roast
in the usual manner.

After turkey is roasted and while it is resting and waiting to be
carved you can make the gravy. Cool the pan juices and veggies
and then puree in a blender. The gravy will be naturally thick
and seasoned perfectly.

This method also works with pot roast. Should you find that the
broth is greasy, skim off the fat before putting it in the blender.
