HERB SAUCE

4 Tbs butter
1 Tbs flour
1 3/4 C. clear beef stock
3 1/2 Tbs tarragon vinegar
1 tsp each marjoram,parsley, chives, finely chopped
salt and pepper

Brown butter and add flour. Cook until smooth. Add stock slowly,
vinegar and herbs; simmer for 3 mins., season with salt and pepper
to taste.
