Mayan Hot Sauce from the Yucutan in Mexico
1/4 cup chopped onion
1/4 large ripe tomato, peeled, seeded and chopped
1/4 cup Habanero chillies, seeded and chopped
1/4 cup Seville (bitter) orange juice
Salt to taste
In a bowl combine all the ingredients, seasoning with salt. Serve
whenever a chilli sauce is used for.
Notes: instead of Habaneros, you can try using similar "chinense"
pods, such as Scotch Bonnets, Fatalli, Datil, Congo or others.
Instead of Seville orange juice, use a mix of 1 part orange juice
to 2 parts lime juice (preferably fresh).
