Marchand de Vin

6 tbsp unsalted butter
6 scallions, minced
3/4 cup dry red wine
2 tbsp fresh lemon juice
1 1/2 cups brown sauce or canned beef gravy

Heat 4 tbsp butter and slowly cook scallions until wilted. Add
the wine and simmer, uncovered, until liquid is reduced to 1/4 cup.
Then add the brown sauce (or gravy) and lemon juice and heat. Add
remaining butter bit by bit, swirling it around by gently rotating
the pan.
