MUSTARD SAUCE

25g/1 oz butter
1 Tbsp plain flour
150 ml/quarter pint vegetable stock
4--6 tbsp single cream
4 Tbsp mild mustard
2 Tbsp chopped dill
1--2 tsp sugar (to taste)

Melt butter in a small saucepan, add flour and cook until golden.
Gradually add the stock with constant stirring and boil for 1--2
minutes. Allow to cool slightly then add the cream, mustard, sugar
and bring to boil briefly with stirring. Add chopped dill before
serving.
