Red Chile Sauce
1/2 cup diced onion 1 clove garlic 1 Tbsp flour (for thickening) 4 Tbsp prepared red chile powder 1 cup water 1/2 to 1 tsp cominos 1/4 tsp dry cilantro
salt to taste oil for sauteing
Mix water and red chile powder in bowl and set aside. Saute onion and garlic in heavy pan, using a small amount of oil. When nearly translucent, blend in flour with spoon, making thick, oniony paste. Keep stirring, as the flour-onion-garlic mixture will crust up and stick to the pan and burn. Add water and red chili and bring to a boil. Simmer, stirring frequently, for 15 minutes. Salt to taste.
I sometimes add one beef bouillon cube to this mixture. Gives a slightly richer flavor when I'm doing beef dishes.
If you have red chiles (as in a ristra) then just stem them and grind 'em up to make your own powder.
