4 cups blueberries
1 cup diced peeled tart apple
1/2 cup sugar
1/2 cup orange juice
1 tsp. grated orange zest
1 tsp. ground ginger
1 small red jalapeno, ribbed, seeded, minced or 1/4 tsp red pepper flakes
1/4 tsp. ground black pepper
3 tbsp. balsamic vinegar
In a medium non-reactive saucepan, combine apple, sugar, orange
juice, orange zest, jalapeno and black pepper. Bring to a boil and
reduce heat to medium, then simmer uncovered, stirring occasionally
until apple is tender - about 15 minutes. Add blueberries and
vinegar and bring to a boil. Continue boiling, uncovered, while
stirring continuously until the mixture thickens, about 5 minutes.
Serve with grilled chicken or pork.
