Tempura Dipping Sauce
1 cup stock
4 tablespoons shoyu (Japanes soy sauce)
3 tablespoons sake
1 tablespoon sugar
1 tablespoon mooli (white radish), grated.
1 tablespoon horseradish, grated (optional)
black pepper, freshly cracked, to taste, (optional)
In a small pan heat the stock, soy and sake, and dissolve the sugar.
Divide into 4 small bowls. Add the radish (and optionally the
horseradish and pepper).
Accompany with a small bowl of freshly squeezed lime juice.
