Place all ingredients in a blender, and whip until smooth. Store in a
tightly covered container in the fridge. Serve cold or at room temp.
Each is good for sandwiches, baked potatos, steamed veggie topping,
artichoke dipping, and anywhere you would use mayonnaise.

1. Plain Fake Mayo:
1 small clove garlic, minced
2-3 tsp. cider vinegar
1/2 tsp. salt

2. Faux Aioli:
2-3 med. cloves garlic, minced
1/2 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. cider vinegar
opt: small handful of freshly minced chives and/or parsley

3. Greek Lemon sauce:
1 Tbs. fresh lemon juice
1/2 tsp. salt
few dashes of white pepper

4. Horseradish sauce:
2 tsp. fresh lemon juice
1/2 tsp. salt
2 tsp prepared horseradish
white pepper, to taste
opt: minced chives
