Clam Cakes
3 packages saltine crackers, crushed 3 raw eggs 3 hard boiled eggs, chopped 3 cans chopped clams, juice and all 3 to 4 stalks celery, chopped 1/2 onion, chopped 2 tablespoons poultry seasoning, or add to your taste
Combine all ingredients, form mixture into egg-size balls and deep fry until lightly browned. Drain on paper towel. Enjoy.
