Snails Palermo Style
(Chiocciole alla Palermita) Italy

2 lbs live snails
3 tablespoons, olive oil
2 cloves garlic,chopped or 1 small onion, chopped
6 oz can tomato paste
2 1/2 cups water
salt and pepper

Cover snails with cold water, add 1 tablespoon salt, and let stand
for 3 hours. Rinse thoroughly several times with fresh water and
drain well. Brown garlic or onion in oil for 2 minute, add tomato
paste and water, and stir until well blended. Simmer uncovered for
15 minutes. Add snails and seasonings. Continue to simmer 20 minutes,
stirring occasionally.Remove snails from sauce with a slotted spoon
and put in serving dish. Spoon some sauce over snails and pour rest
of sauce over 1/2 lb cooked pasta. Serves 4
