MUSSELS

1kg fresh mussels in shell
3 cloves garlic
1 cup tomato juice
1 tsp honey
2 tsp vinegar (not malt)
2 tsp tarragon (2Tbs fresh)
ground black pepper

Wash the mussels and remove the beards. Spread them out in a large
roasting dish, cover and bake for 10 mins. at 200 C or until they
just open.

While they are cooking bring the remaining ingredients to the boil.
Transfer the cooked mussels to a serving dish, Pour the sauce over
and serve.

VARIATION

Use 1 cup of white wine instead of tomato juice. Remember to
discard any unopened mussels.
