Oysters Kilpatrick 01

Oysters KilJeff (a variation on Oysters Kilpatrick) 6-12 oysters (per person) 1 green onion or shallot (per person), finely sliced 2 rashers bacon per person, finely diced 50ml / 2 oz per person Worcestershire sauce. 50ml / 2 oz per person A1 Steak sauce juice of half a lemon per person. 1 teaspoon garlic Tabasco per person Fry bacon until almost crispy, drain and put to one side.
Shuck oysters (discard top shell and separate meat from lower shell, return to s hell).
Sprinkle sliced spring onion on each oyster.
Top each oyster with a generous amount of bacon.
Mix liquid ingredients and spoon over each oyster.
Place oysters on ovenproof plate/tray which has a layer of rock salt (rock salt will hold the oysters steady and stop them tipping and spilling their juices). Grind a small amount of black pepper over each oyster.
Oysters can be prepared to this point a couple of hours in advance and returned to refrigerator covered with plastic wrap..
To serve: Preheat Griller/broiler or oven (high 350/375) and broil/grill/bake oysters for approximately 6 minutes or until bacon crisps and browns slightly. Se rve as quickly as possible with a little crusty bread to soak up the juices.
