Scampi

1 pound raw jumbo shrimp in the shell
1 cup olive oil
3 Tbsp. dry vermouth (optional)
2 Tbsp. minced parsley
1 clove garlic, peeled and crushed
1 tsp salt
1/4 tsp pepper

Shell shrimp, leaving tail ends on, then devein. Rinse in cold
water, pat dry and place in a shallow bowl. Mix remaining ingredients
and pour over shrimp; cover and chill 2 - 3 hours in refrigerator,
turning once or twice in marinade. Preheat broiler. Place shrimp
on a foil-lined broiler pan and brush generously with marinade.
Broil 5" to 6" from heat, 3 minutes on each side, basting often
with marinade. Yields 2 servings
