Dijon Shrimp Scampi
1 pound large shrimp, shelled and deveined
1 clove garlic, minced
2 tablespoons butter or margarine
1/3 cup Dijon mustard
1/4 cup lemon juice
1/4 cup fresh parsley
hot cooked rice, optional
In large skillet, over medium-high heat, cook and stir the shrimp
and garlic in the margarine just until pink.
Blend in the mustard, lemon juice, and parsley. Heat through.
Serve over rice if desired.
