CAMARONES ACAPULQUENOS
(Acapulco Shrimp)

1 lb uncooked shrimp
1-1/4 cups water
2 Tbsp butter
1/2 onion, finely chopped
3 cloves minced garlic
1 green chili, finely chopped
3 Tbsp parsley, chopped
3 large tomatoes, chopped
2 Tbsp tomato paste
juice of 1 lime
dash salt and pepper

2 Tbsp parsley, chopped
lime wedges
boiled rice

Peel and devein shrimp. Reserve raw shrimp. Boil shells only for
15-20 minutes. Strain and reserve liquid. Saute onions, garlic,
chili and parsley. Add tomatoes, tomato paste, lime juice, salt
and pepper. Simmer for 10-15 until thickened. Add reserved shrimp
liquid, simmer for 5 minutes. Add raw shrimp and cook until pink.
Serve with rice and garnish with lime wedges and parsley.
