Aloo/Potato Pies
Recipe for 8 aloo pies.
4 medium potatoes
1 large cup flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup water
1 hot scotch bonnet pepper(medium)
1 sprig thyme
chives
1 small onion
1 teaspoon crushed garlic
vegetable oil for frying
Peel potatoes and boil in a large pan until tender. Mix flour and baking powder together with a pinch of salt, then add water, and knead thoroughly until the dough is of medium texture. Roll into 8 small balls and leave to rest. Mash potatoes and add the rest of salt, chopped thyme, chive, onion, pepper and garlic, mix in well.
Get a deep frying pan and pour vegetable oil half way up and leave to reach boiling point, then turn down to a low heat. Meanwhile, roll out balls into a flat circle using a rolling pin and fill with the potato mixture, ensuring that the mixture is separated into eight portions. Fold one half of the circle over the other half and press firmly down with the prongs of a fork, or with fingers to ensure that it sticks. Place pie in hot oil and leave until golden brown, turn as required, otherwise it will burn. Remove pies from oil and leave on paper towels to drain, then wrap in kitchen towels to keep warm.
Serve alone or with different hot sauces/chutneys, tamarind, mango etc.
