Pecan Brittle
GLACEED NUTS
4 cups assorted nuts, no peanuts 1 1/2 cups sugar 1 cup light corn syrup 1/3 cup water 2 tablespoons butter 1/2 teaspoon salt 1 teaspoon vanilla Dipping chocolate (optional)
Warm nuts at 350 degrees F. Generously butter a 17 x 14 cookie sheet. Combine sugar, syrup, and water in a saucepan. Cover and bring to a boil. Remove cover; place thermometer in pan and cook, without stirring, to 290 degrees F. Remove from heat and stir in warm nuts, butter, salt, and vanilla. Pour out on a generously buttered cookie sheet and spread as thinly as possible. Cool completely and break into pieces. Can be eaten as is or dipped in chocolate. Store in an airtight container. Makes about 5 cups.
PECAN BRITTLE
2 cups sugar 1/3 cup light corn syrup 1 cup butter 1/2 teaspoon salt 1 teaspoon baking soda 1 teaspoon vanilla extract 5 cups pecans Dipping chocolate (optional)
Toast pecans at 200 degrees F until warm; set aside. In a large saucepan, combine sugar and corn syrup and cook to 310 degrees F, stirring constantly. Add butter; continue cooking, stirring constantly, to 290 degrees F. Remove from heat; stir in salt, soda, vanilla, and nuts. Beat quickly, and spread out on a greased marble slab or on a heavily greased cookie sheet. Break apart when cool. Can be eaten as is or dipped in chocolate. Makes about 20 pieces.
