Caramel Corn 06

Oven Baked Caramel Corn
3 3/4 quarts air-popped popcorn 1 cup packed brown sugar 1/2 cup margarine 1/4 cup light corn syrup 1/2 tsp salt 1/2 tsp baking soda
Heat oven to 200 degrees Fahrenheit. Divide popped corn between two 13 x 9 x 2 baking pans. Heat sugar, margarine, corn syrup and salt in a two-quart saucepan. Stir occasionally until bubbly around the edges. Cook sugar mixture five more minutes over medium heat and then remove. Stir in soda. The mixture will foam up quite a bit. Pour over popped corn in both baking pans and toss until well-coated. Bake at 200 degrees for one hour, stirring every 15 minutes. Cool. Store in an air-tight container.
