Caramel Corn
8 cups popped popcorn 3/4 cup packed brown sugar 6 tablespoons butter 3 tablespoons light corn syrup 1/4 teaspoon baking soda 1/4 teaspoon vanilla 1/4 teaspoon salt
Remove all unpopped kernels from popped corn. Put popcorn in a 13 x 9 inch pan. In a 1-1/2 quart saucepan, combine butter, sugar, corn syrup and salt. Cook and stir over medium heat until butter melts and mixture comes to boiling. Cook on low heat--without stirring--for 5 minutes more. Remove from heat. Stir in baking soda and vanilla. Pour over popcorn. Gently stir to coat. Bake in 300 degree oven for 15 minutes, stir. Bake 5-10 minutes more, stir. Remove to a large cookie sheet and let cool. Store in tight container.
