GLACEED NUTS

4 cups assorted nuts, no peanuts
1 1/2 cups sugar
1 cup light corn syrup
1/3 cup water
2 tablespoons butter
1/2 teaspoon salt
1 teaspoon vanilla
Dipping chocolate (optional)

Warm nuts at 350 degrees F. Generously butter a 17 x 14 cookie
sheet. Combine sugar, syrup, and water in a saucepan. Cover and
bring to a boil. Remove cover; place thermometer in pan and cook,
without stirring, to 290 degrees F. Remove from heat and stir in
warm nuts, butter, salt, and vanilla. Pour out on a generously
buttered cookie sheet and spread as thinly as possible. Cool
completely and break into pieces. Can be eaten as is or dipped in
chocolate. Store in an airtight container. Makes about 5 cups.
