Spicy Roasted Pumpkin Seeds

Preheat the oven to 350-degrees F. Rinse the seeds clean of any
pumpkin flesh. Combine the seeds with 1 teaspoon olive oil and 1
teaspoon Emeril's Creole Seasoning (see below) per 1/2 cup of
pumpkin seeds, using your hands to coat the seeds evenly. Place
on a baking sheet and bake until brown and crisp, for about 15
minutes. Store in an airtight container at room temperature for
2 weeks.


Creole Seasoning
Yield: About 2/3 cup

2-1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne powder
1 tablespoon dried leaf oregano
1 tablespoon dried leaf thyme

Combine all ingredients thoroughly and store in an airtight jar or
container.
