Rosemary and Spice Nuts

2 1/2 cups mixed raw nuts
2 tablespoons olive oil
1 1/2 tablespoons choped fresh rosemary
1 tablespoon sugar
1 1/2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper

Preheat oven to 300 degrees. Place nuts in a heat-proof bowl.
Warm oil in a small, heavy saucepan over medium-low heat, Add
rosemary, stirring until aromatic, about 1 minute. Pour warmed
oil over nuts, adding remaining seasonings, and stir to coat well.

Place nuts in a baking pan and bake about twenty minutes until they
are toasted. To prevent overbrowning, you can stir them gently
from time to t ime, and use a baking pan with a light-colored
finish. If you intend to store them before serving, allow them to
fully cool before putting them in an air-tight container. Avoid
overhandling the nuts, as the spicy coating tends to fall off.
