Sweet and Spicy Roasted Pecans

1 lb pecan halves
1/2 c granulated sugar
2 Tbsp vegetable oil
1 Tbsp ground cumin
1 tsp ground coriander
1 tsp chili powder
3/4 tsp salt
1/2 tsp ground ginger
1/4 tsp cinnamon
1/4 tsp cayenne
1/4 tsp cloves

Blanch pecans in boiling water for 1 min, drain. transfer to large
bowl. Sprinkle with sugar and drizzle with oil, toss to coat well.
Let stand for 10 minutes.

Spread on greased foil lined cookie sheet, bake 325 F for about 25
minutes (or until nuts are crisp and slightly darkened), turning
every 5 minutes.

Meanwhile combine rest of spices in metal heatproof pan, toast in
oven alongside nuts for 5 minutes.

Pour nuts in large bowl, sorinkle with spices and toss to coat
well. Spread on baking sheet to cool. Makes 5 cups.
