SEARCH RECIPES: LOCATION: Recipes >> Snack Recipes >> Whoopie Pies 03    Whoopie Pies 03 Whoopie pies 18-oz. box chocolate cake mix 1 Tbs. corn oil 3/4 c. water 2 eggs 1/2 c. butter or margarine 1/2 c. marshmalle creme 3/4 c. powdered sugar Heat oven to 375. In a large bowl combine the cake mix, oil, water and eggs. Beat for two minutes or until smooth. Drop the batter by teaspoonfuls onto greased cookie sheets, making no more than 6 on each sheet. Bake for 10 minutes or until browned. In a medium bowl combine the butter, marshmallow creme, and sugar. Beat until smooth, approximately 2-3 minutes. The dough however, was not stiff enough. If you use any more than a teaspoon of mix, it spreads easily on the cookiesheet, making the cakes much larger than expected! As for the filling, not only did the ingredients do not yield enough, but it was not very stiff either. To thicken it up, I tried to add a bit more powdered sugar, but then the filling tasted too sugary. Maybe there is too much marshmallow cream?? Following the recipe directions, I had to make 3 batches of the filling to ensure that I filled all of the cakes. The final product is definitely tasty though!!
