Whoopie pies

18-oz. box chocolate cake mix
1 Tbs. corn oil
3/4 c. water
2 eggs

1/2 c. butter or margarine
1/2 c. marshmalle creme
3/4 c. powdered sugar

Heat oven to 375. In a large bowl combine the cake mix, oil, water
and eggs. Beat for two minutes or until smooth. Drop the batter
by teaspoonfuls onto greased cookie sheets, making no more than 6
on each sheet. Bake for 10 minutes or until browned. In a medium
bowl combine the butter, marshmallow creme, and sugar. Beat until
smooth, approximately 2-3 minutes. When the cookies are cool,
sandwich pairs to gether with marshmallow fillin in between, and
serve.

To respond to the comment that was written,First off try cutting back on the water in the cake mix.I never use all the water it says to use.The filling,I always use:1/2 c marg.,1c of confect.sugar,1c of fluff,and 1teasp.vanilla.Try that.I bet you will like it better.

Making the cakes was the easy part. The dough however, was not stiff enough. If you use any more than a teaspoon of mix, it spreads easily on the cookiesheet, making the cakes much larger than expected! As for the filling, not only did the ingredients do not yield enough, but it was not very stiff either. To thicken it up, I tried to add a bit more powdered sugar, but then the filling tasted too sugary. Maybe there is too much marshmallow cream?? Following the recipe directions, I had to make 3 batches of the filling to ensure that I filled all of the cakes. The final product is definitely tasty though!!
