Whoopee Pies
1/2 c. shortening
1 c. sugar
1/2 c. buttermilk
1 tsp. baking soda
1 egg
1 1/2 c. flour
1/2 c. cocoa
1/3 c. liquid coffee
1 tsp. vanilla
pinch of salt
Mix all ingredients together and drop by teaspoonsful onto a greased
cookie sheet. Bake for 10 min. at 350.
1/2 c. milk
2 T. flour
1/2 c. sugar
1/2 c. shortening
1 tsp. vanilla
pinch of salt
Cook milk and flour until a smooth paste consistency, stirring
constantly. Cool. Cream sugar and shortening and add to paste.
Add vanilla and salt and beat well with electric mixer. Filling
will get fluffy and white. Spread filling on one cookie and top
with another one. Makes 12-18.
