CREAM OF ARTICHOKE SOUP

1 1/2 cups artichoke pulp
6 1/2 cups thin Bechamel sauce
1 cup scalded milk
1/2 cup heavy cream
salt and pepper
croutons (option)

Prepare artichokes according to method 6 (see note below). Make
the thin Bechamel sauce. Add artichoke pulp and hot milk and stir
well. Season to taste and reheat, adding the cream. Serve hot
and, if you like, serve a little bowl of croutons fried in butter.
Serves 6.
