Mushroom Barley Soup
2 onions 2 stalks celery 2-4 cloves garlic 1 lb. fresh mushrooms 1/2 c. soy sauce 1 c. barley 1/2 t. salt 1/2 t. garlic powder 1 t. dill 1 t. chopped fresh parsley 10 c. water 2 carrots
In a large pot, combine chopped onions, celery, garlic, and mushrooms. Add some water to the veggies so they don't stick to the pot. Saute for about 4 minutes, then add barley, soy sauce, seasonings, and water. Bring to a boil, then simmer (either covered or not)for 2-3 hours. Forty-five minutes before it is done, add chopped carrots. Tastes better next day.
