Barley Mushroom 05

Mushroom Barley Soup Make 4 pints
2 Tbsp. salt pork 3 Tbsp. diced shallots or onions 1/2 c. barley
3 well-beaten egg yolks 1 c. cream 1 cup sauted, chopped mushrooms
Melt salt pork in a skillet. Add onions and cook until translucent. Add barley.
Shake the pan to coat the barley well in the hot fat. After about 5 minutes, add: 1 qt. ham stock Cook the mixture, covered, until the barley is tender (approximately 1 hour). If you want a thick, rich soup, bind the mixture with eggs and cream.
Heat, but do not boil, after adding eggs and cream. Before serving add mushrooms.
