Lentil Soup

1 1/2 cup chopped onion
3 Tbsp. oil
1/2 lb. lean ground beef
1/2 cup diced carrot
1/2 cup peeled, seeded tomato
1 stalk celery, diced
6 cup water
1 cup lentils, rinsed
salt and pepper to taste

In a large saucepan saute onion in oil until softened, stir in
ground beef, salt and pepper and saute for 5 minutes. Stir in
vegetables and saute 5 minutes. Stir in water and lentils, simmer
covered for 1 1/2 hour or until vegetable and lentils are tender.
You can substitute canned tomatoes for the fresh if desired.
