Black Bean Soup
1 lb. dried black beans
6 cups vegetable stock
3 cloves garlic, crushed and chopped
3-4 chili peppers
1 cup onion, chopped
1 cup bell pepper, chopped
1 sweet potato, julienned
2 tb. safflower oil
1/2 tsp. oregano
1/2 tsp black pepper
1 clove garlic, crushed and chopped
Soak beans overnight. Drain.
In soup pot, bring stock to boil and add beans, garlic and chili
peppers. Boil for 1-1/4 hours.
In pan put oil, onion, bell pepper, and potato. Saute 2 minutes.
Add to beans. Add remaining ingredients and simmer 1 hour.
This can be served either as a soup or as a stew on tortillas.
