Black Bean Soup
Soak a pound of dried black beans overnight in three quarts of water.
Boil/simmer them. Once the simmer is established, add the bone of a consumed pork or ham shoulder, with about half a pound of meat still attached.
Simmer so for an hour.
Add one thinly sliced onion, four minced garlic cloves, two minced serrano chili peppers, two minced canned tomatoes, a teaspoon of thyme, and a few grinds of black pepper.
After another two hours of simmer, salt to taste. Remove all the pieces of pork bone you can find, and serve.
