Borscht

1 lb spare ribs, cut short
1-1/2 onions, chopped
3 large carrots, diced
2 large potatoes, peeled & cubed
3-5 cups beets, cooked & shredded
1 cup peas
2 tsp salt
1/2 tsp pepper
2 tbsp vinegar
1 tsp dry dill weed

Cover spare ribs in pot with enough water to cover. Bring to a
boil. Cover & simmer for about 1 hour. Skim off any scum which
comes to the top. Add remainder of ingredients. Simmer until
vegetables are cooked. Use whipping cream or sour cream if desired.
