Borscht

2 lbs fresh beets, peeled
2 t salt
2 quarts water
1 onion, skinned
1 clove garlic, skinned
3-4 T sugar
1/4 c lemon juice
1/2 t sour salt (citric acid)

In a large pot, combine the beets, salt, onion, garlic and water.
Bring to a boil, cover and simmer for one hour. Add the remaining
ingredients and simmer for an additional 1/2 hour. Discard the
onion and garlic. When the beets are cool enough to handle, grate
them coarsely into the liquid.

Chill and serve topped with a dollop of sour cream and a diced hot
cooked potato, if desired.
