Butternut soup with ginger and lime
(i make this all the time but never measure so i am gussing at the
amounts, please adjust to your own taste.)

4 cups peeled cut squash
1 -2 onions (depending on how much you like em!)
2 -4 tbl. butter
4 cups chix. stock
~3 tbl. grated ginger (fresh only)
juice from 2 limes.
salt and pepper

chop the onion and cook untill wilted in the butter. add in the
ginger and stir it around a bit, (~ 1 or 2 minutes). add the chix.
stock and the squash. cook all untill squash is soft. remove from
stove and blend up the whole mess in a blender. (you usually have to
do it in batches). Return pureed concoction to soup pot, add in lime
juice, salt and pepper to taste. wola! Soup!
