IRISH CABBAGE SOUP

3 tbs. butter
3 tbs. chopped onion
1/4 cup chopped peeled raw potato
3 cups finely chopped green cabbage
3/4 tsp. salt
1/2 tsp. nutmeg
1 tbs. flour
2 cups broth or water
2.5 cups milk
chopped parsley


Heat butter in a skillet or Dutch oven. Add onion and saut\xe9
until tender but not browned. Add potato, cabbage, salt, nutmeg
and flour and mix. Add broth, cover and cook 20 minutes. Puree in
blender or use a food mill. Add milk and reheat. Serve sprinkled
with parsley. Makes 5 cups.
