Chard Soup

2 TBS olive oil
1 tsp mustard seed
1 lg. clove minced garlic (or more)
1 med. chopped onion
2 stalks chopped celery
4 med sliced potatoes
1 bunch chard, shredded and coarse stems removed
6 cups stock
1 TBS white vinegar
Salt and Pepper
sour cream or yogurt (opt)
Chives (opt)

Heat oil and mustard seed until seeds begin to pop. Saute garlic
and onion in oil until softened. Add celery, potatoes, and chard.
Add stock, boil and cook til pots are very tender 25 to 30 mins.
Mash pots in the pan until coarsely broken up. Add vinegar and cook
uncovered for another 10 mins to concentrate flavors Salt and
Pepper. Serve, garnished with dollop of sour cream (I use yogurt)
topped with sprinkle of chives.
