Cheese Soup
1/2 c grated carrot
1 c chicken broth
1/2 c finely chopped onion
1/4 tsp salt
1/4 c finely chopped celery
2 c light cream or milk
2 tbsp butter
1 1/2 c shredded cheddar or american cheese
1/4 c flour
In covered saucepan cook carrots, onion and celery in butter over
low heat until tender. Stir in flour. Add broth and salt. Cook
and stir until thickened and bubbly. Stir in cream or milk and
cheese until cheese melts and soup is heated through. Do not boil.
