Chicken Foot Soup
4 pairs chicken feet 4 pounds stewing chicken 1 large carrot 1 large onion 4 stalks celery 1/2 bay leaf 6 peppercorns 9 cups water
Wash feet and cut off claws. Lay feet in shallow pan and pour boiling water over them to cover. When cool, skin the feet. Put all the ingredients in a stewing pot and bring to a boil. Reduce heat and simmer until chicken and vegetables are tender. Remove the meat and save for another dish. [or skin, remove from bones, dice and add back to the soup just before serving]. Strain the soup and, if necessary, reduce for a stronger consistency. This soup will chill to a firm jelly.
